Many of us have an innate obsession and love for pasta but it hurts when you are on your diet when you can’t eat your favourite food. Not to worry we got you covered with a super healthy and tasty Zucchini noodle recipe that aids weight loss.
Pasta is a favourite food for a lot of us. This dish is versatile and appeals to most age groups. Pasta however also has drawbacks. Pasta tempts us with its taste and satiates our cravings but also contributes to weight gain due to its high carbohydrate content. Pasta whilst being a comfort food for many is generally not recommended for dieters. Here’s the recipe of super healthy Zucchini noodles that will satiate your pasta craving –
Ingredients – Yellow and Green Zucchini, salt, Olive oil, Garlic, Lemon
1. Take your zucchini and use a mandolin or spiralizer to make the noodle shape.
2. Put your zucchini strips in a bowl and sprinkle salt and toss them well. Now leave the zucchini to marinate for an hour.
3. Discard the salty zucchini brine and rinse the strips under cold water to get rid of excess salt. Take a kitchen towel and blot dry the strips to remove moisture.
4. Sauté minced garlic in a pan and add it to the bowl of zucchini strips. Lastly, add lemon zest and olive oil and toss them well and serve.
(You can also cook the zucchini noodles until you get the slightly crunchy texture but make sure not to overcook as it would become mushy)
This is the most generic recipe for zucchini noodles but if you want to add more flavour to it you could toss it in a pan with your choice of vegetables, lean meat, herbs, spices, nuts and ricotta/parmesan cheese if your diet permits.
